Our client holds an independent trophy asset on the Las Vegas Strip that was already producing high returns, however, with the recent minimum wage and benefit hikes, we were asked to work alongside the resort’s management team to generate performance improvements and drive productivity so the operation could easily absorb any extra costs incurred while still running at high occupancy levels and best-in-class service levels.
Our challenge was to define efficiencies and processes to augment labor standards all within the parameters of a semi-unionized environment. The hotel consisted of a high room count, extensive F&B facilities, casino, spa, full leisure facilities, retail and branded fast casual restaurants.
The Results
Given the size of the property and the types of improvements identified by our team, the results were substantial:
- Developed improved labor standards through measured analysis
- Instituted scientific volume forecasting tools
- Created dashboards to provide visibility to KPI attainment
- Redesigned section sizes through process improvements for union areas
- Improved Housekeeping credit attainment through process refinements and floor assignments
- Significantly improved throughput at QSR venues
- Improved warehouse layout, order picking, and transportation
- Practically reduced material waste across numerous departments
- Generated purchasing management methodology to capture ordering efficiencies
- Maximized vendor terms, available purchasing discounts, and accounts payable practices
